Il Marcovaldo is sourced from vineyards that benefit from the cool climate of the Montalto Pavese hills. It’s a young, light and fruit forward interpretation of the noble Burgundy grape, which is grown in Oltrepò Pavese since the mid XIX century.
Type: still red.
Grape: Pinot Noir (100%).
Alcohol: 13% vol.
Vinification: the grapes are hand-harvested in 20 kg plastic boxes and then destemmed and crushed. A cold maceration with dry ice for 24-48 hours precedes the alcoholic fermentation in temperature-controlled stainless-steel vats (20-25 °C). During the fermentation, short pump-overs and regular punch-downs are carried out. Once separated from the skins, the wine ages in the same vats. It’s bottled in the spring after the harvest.
Tasting notes
Sight: bright pale ruby red.
Nose: the nose presents the classic fruit and floral notes of the variety (especially fruits of the forest), with balsamic and spicy (black pepper) hints.
Palate: medium-bodied, round and elegant, with a pleasant mineral finish. The tannins are fine-grained and well-balanced with the acidity.
Service temperature: 14-16 °C.
Suggested pairings: excellent as a pre-meal drink, it pairs well with starters, risotto, delicate dishes and medium-aged hard or semi-hard paste cheese. It can also be enjoyed at a lower temperature with a fish soup.
