The Pinot Noir grapes of our Extrà Rosé come from vineyards facing north and sitting on limestone-loam soil. These conditions ensure an ideal freshness for a sparkling wine. The rosé colour is achieved in a natural way, leaving the must in contact with the skins for a short time.
Type: Metodo Martinotti rosé sparkling wine (6 months on the lees).
Grape: Pinot Noir (100%).
Alcohol: 12% vol.
Vinification: the grapes are hand-harvested, quickly brought to the winery in perfect shape and gently pressed. The delicate rosé colour is achieved by a short maceration in the press. The free-run must ferments in temperature-controlled stainless-steel vats. Then, the wine is put in autoclave where we add selected yeasts to start the secondary fermentation. The wine ages on the lees for 6 months before being bottled and released.
Tasting notes
Sight: delicate rosé colour. Fine-grained bubbles, persistent foam.
Nose: inviting nose with aromas of cherry and rose. Very light note of face powder in the background.
Palate: elegant palate with flavours of citron and pink grapefruit. Fine, creamy bubbles.
Service temperature: 6-8 °C.
Suggested pairings: perfect as a pre-meal drink, it pairs well with seafood, delicate first courses, white meat and fresh cheese.
Contains sulphites.
