The Chardonnay grapes for Il Fermo are grown in our oldest vineyards. Their age and the sand-limestone soils give peculiar complexity and minerality to this wine.
Type: still white wine.
Grape: Chardonnay (100%).
Alcohol: 13% vol.
Vinification: manual harvest at the end of August. The grapes are softly pressed (grape-must yield: 70%). The fermentation is carried out in stainless-steel vats at a controlled temperature of 16-18 °C to keep the aromatic precursors intact. The wine then ages in stainless-steel vats for 8 months.
Tasting notes
Sight: straw-yellow colour with greenish highlights.
Nose: rich and varied nose with notes of rose, white flowers, yellow fruits (especially pineapple) and citrus (lime).
Palate: the tropical notes perceived on the nose return on palate. A crisp acidity and a touch of minerality add to the overall pleasantness of the wine.
Service temperature: 8-10 °C.
Suggested pairings: excellent as a pre-meal drink, it pairs well with starters, pasta with light sauces, fish and shellfish.
