Il Baldo is the first wine produced by our winery and has been conceived to bring out all the virtues of Croatina, one of the most important grapes grown in Oltrepò Pavese. This indigenous variety has found on our hills the ideal climate to express its character at best.
Type: still red wine.
Grapes: Croatina (85%) and Barbera (15%).
Alcohol level: 14% vol.
Vinification: the grapes are harvested by hand and then destemmed and crushed. The must is left to ferment in stainless-steel vats at a controlled temperature of about 22-28 °C. Maceration of the skins lasts about 15-20 days. Once the wine has been racked off, it ages for 10 months in stainless-steel tanks and for 2 months in the bottle.
Tasting notes
Sight: deep ruby red with purple highlights.
Nose: complex nose, with aromas of dried plum, blackberry, black cherry, dog rose and a light note of black pepper.
Palate: dry and round with elegant tannins and a prevailing taste of Marasca cherry.
Service temperature: 16-18 °C.
Suggested pairings: it pairs well with Italian salumi, bold-flavoured pasta dishes, red meat-based dishes, braised beef and medium-aged cheese.
