Il Nirò is sourced from perfectly ripe and carefully selected Pinot Noir grapes, hand-harvested in small plastic boxes in our vineyards in Montalto Pavese. Here, the soils, the favorable exposure of the vineyards and the wide difference in temperature between day and night allow the noble Burgundy grape to express itself at best.
Type: oaked still red.
Grape: Pinot Noir (100%).
Alcohol: 13% vol.
Vinification: the grapes are hand-harvested in 20 kg plastic boxes and then destemmed and crushed. A cold maceration with dry ice for 5-7 days precedes the alcoholic fermentation in temperature-controlled stainless-steel vats (20-25 °C). Maceration lasts for about 15-20 days. During the fermentation, short pump-overs and regular punch-downs are carried out. Once separated from the skins, the wine ages in new and used French oak barriques for 12 months. It further ages for 6 months in stainless-steel vats and for additional 6 months in the bottle.
