
Time is the crucial factor for this semi-aromatic wine. The more it ages in bottle, the more it acquires a fascinating complexity, full of subtleties.
Type: still white wine.
Grape: Riesling (100%).
Alcohol: 13% vol.
Vinification: the grapes are hand-harvested. A cold maceration with dry ice for 10 hours precedes the soft pressing of the grapes. The must is then put in temperature-controlled stainless-steel vats (15-17 °C) for the alcoholic fermentation. After the fermentation, the wine is racked in stainless-steel vats where it ages for 12 months. During this time, the settled lees are stirred back into wine to extract flavour, aroma and texture. Finally, the wine ages for 12 months in bottle before release.
Tasting notes
Sight: intense straw-yellow colour.
Nose: rich nose with a mix of floral (lily-of-the-valley and rose) and fruity (bergamot orange) notes. In the background, hints of the signature Riesling aroma of petrol emerge.
Palate: true to the nose, fresh, elegant and complex palate. Long finish full of mineral overtones.
Service temperature: 8-10 °C.
Suggested pairings: perfect with fish and shellfish starters and main courses. It can also be paired with delicate starters and white meats.
