For our Il Piffero we need grapes with high freshness and acidity: we have therefore chosen to grow them in vineyards facing east and sitting on sandy loam soils, the ideal context to get the desired characteristics.
Type: white semi-sparkling wine.
Grape: Pinot Noir (100%).
Alcohol: 13% vol.
Vinification: harvest time is decided after a careful monitoring of the acidity values of the grapes, a crucial factor for the production of fresh and crisp white wines. The grapes are pressed gently to avoid the extraction of juice from the unripe berries. The fermentation is carried out at a controlled temperature never exceeding 16-18 °C to keep the aromatic precursors intact. The fermentation is stopped when the value of residual sugar reaches 3 Babo degrees, an amount high enough to start the secondary fermentation in autoclave.
Tasting notes
Sight: very pale straw-yellow colour; delicate foam with a medium persistence.
Nose: marked by prevailing notes of rose and unripe yellow peach.
Palate: good sapidity and freshness, completed by a strong minerality and a touch of saltiness.
Service temperature: 16-18 °C.
Suggested pairings: great with red meat-based dishes, game and aged cheese.
Contains sulphites.
