Il Caroaldo, sourced from the grapes of a small historical estate vineyard that sits on clay-limestone soil, is produced in limited numbers. We grow several types of flowers in the vineyard: in spring we dig them in the soil as green manure. This technique increases the fertility of the soil, but also adds aromatic complexity to the wine.
Type: oaked white wine.
Grape: Chardonnay (100%).
Alcohol: 13% vol.
Vinification: the grapes are harvested by hand, carefully selected and quickly brought to the winery. A cold maceration with dry ice for 12-18 hours precedes the pressing of the grapes. The must ferments and ages in French oak barriques for about 12 months.
Tasting notes
Sight: straw-yellow colour.
Nose: rich nose, with notes of white flowers (especially chamomile) and hints of spices.
Palate: harmonious palate, with a mix of citrus and spices. Hints of black tea leaf in the long finish.
Service temperature: 10-12 °C.
Suggested pairings: excellent with fish, it offers intriguing sensations when paired with foie gras and white truffle dishes.
